How to Make Mānuka Honey ANZAC Biscuits

Prepare the Oven

Preheat the oven to 160°C fan and line a baking tray with baking paper.

Combine the Dry Ingredients

In a large bowl, combine the oats, coconut, flour, caster sugar, brown sugar, dried fruit, and orange zest. Add any nuts or seeds if using.

Make the Honey Mixture

In a saucepan over low heat, melt the butter and mānuka honey together until smooth.

Dissolve the bicarbonate of soda in the boiling water, then stir it into the butter mixture. The mixture will foam slightly.

Remove from the heat and stir in the vanilla extract.

Bring Everything Together

Pour the warm honey mixture into the dry ingredients and mix until well combined.

Shape the Biscuits

Roll tablespoon-sized portions of the mixture into balls and place them on the prepared tray, allowing approximately 5cm between each biscuit.

Bake

Bake for 16–18 minutes, or until golden around the edges.

Cool and Serve

Allow the biscuits to cool on the tray for 5 minutes before transferring to a wire rack to cool completely.

The Texture

Chewy • golden • caramelised • buttery • comforting

Serving Tip

Enjoy with a cup of tea, coffee, or a warm glass of milk. For an extra touch of indulgence, drizzle lightly with warmed mānuka honey just before serving.

Make It Your Own

  • Add chopped walnuts or almonds for extra crunch.
  • Swap the dried fruit for raisins, cranberries, or chopped apricots.
  • Add a pinch of cinnamon for gentle warmth.
  • Sprinkle with flaky sea salt before baking to enhance the caramel notes.
